Plant based "Chicken" and Broccoli Casserole


Instructions

  1. Take washed broccoli  and cover the bottom of a casserole pan.  
    Use a lot of broccoli. It's good for you! 
  2. Top with 2 packages "chicken" style seitan or chicken-less strips

  3. Mix in a bowl 1/2 cup Plant Perfect Vegan Mayo with 1/2 cup plain soy creamer and 1 cup plant based cheddar cheese and salt and pepper.  Pour over broccoli and "chicken" mixture.
  4. Pour 2 cups of non-dairy cream of mushroom soup over the casserole.

  5. Bake 350 for 45 mins til bubbly. 

  6. Serve over brown rice or vegan mashed potatoes. 

  7. Optional: top casserole before baking with small pieces of bread and extra dairy free cheese.
